Jalapeños are dark green, medium-hot, thick-walled peppers that are 3" long x 1" wide, with rounded tips. Spicy jalapeños are used in everything from Mexican cuisine to nachos to pizza. As they mature, they turn from green to red, and are perfect for pickling and making salsa. When dried and mesquite-smoked, they are known as ‘chipotle’ chiles.
