Aji Amarillo is the Chile most frequently used in Peru and probably the most important ingredient in Peruvian cooking.

Aji Amarillo is the Chile most frequently used in Peru and probably the most important ingredient in Peruvian cooking. "Aji" means chili pepper and "Amarillo" means yellow in Spanish. This Chile is found in the famous appetizer Papa a la Huancaína (Potatoes with Spicy Cheese Sauce), and in the classic dish Ají de Gallina (Peruvian Creamed Spicy Chicken). It is hot, sweet, and fruity. When dried, it is called Ají Mirasol or Cusqueno. The peppers can get over 6" in length and over 1" wide. The heat is no joke either, coming in at a mere 30,000 - 50,000 Scoville Heat Units. They are great for grilling and stuffing since they are so large. Such a fantastic pepper and very versatile. Non-Isolated.
