Arroz Con Pollo is a Cuban seasoning pepper, delivering a fragrant, habanero-like aroma with little to no burn, especially when the seeds are removed. Compact to medium plants (often 3 to 4 feet tall) are high-yielding and produce small, lantern-shaped fruits that start green, then ripen to bright orange and finally red. Pick at the orange-red stage for peak flavor, then sauté a few pods with onion, garlic, and annatto to perfume beans, rice dishes, and any slow-simmered pot.
