Blue Marzano is a striking twist on the classic San Marzano, producing elongated, pointed paste tomatoes that often run about 2.5 inches long and roughly 2 to 3 ounces each. Fruits color up with an eggplant purple to blue-black blush, then finish to a rich burgundy or maroon red with firm, meaty red flesh and very few seeds. With lower moisture than slicers and a mild, sweet, gently earthy flavor, it excels in pizza sauce, pastes, purees, and canning, and it is also a fun addition to fresh salads. Indeterminate plants are typically midseason at about 75 to 85 days from transplant and can stay on the more compact side for an indeterminate, making them a good fit for sturdy cages, raised beds, and even large containers. Plant early for best late-season ripening, since the darker skin can slow things down as nights cool.
