A unique species of grain amaranth from the subtropical Mexican highlands that requires a fairly long season to mature when compared to our other grain amaranths. Tall 5-7’ tall plants have pale green edible leaves, green stems, and pale yellow-green seed heads. Cut seed heads and lay them out to dry at the end of the season and then they are easy to thresh out.
