This unusual deep purple tomatillo makes an ideal salsa with its sweet tart flavor. The tomatillos are encased in paper-thin heart-shaped husks that go from light green to burlap-colored as the tomatillos ripen. The tomatillos themselves will turn purple when ripe. Very decorative as a garnish and great grilled.
Though tomatillos resemble the look of a tomato, their flavorings are starkly different. As tomatoes sweeten with maturity, the purple tomatillo is fruitier and truly sweet-tart. Purple tomatillos are less tart than their green counterpart, and cooking them will enhance their flavor while also imparting a greater depth of sweetness.
