0-500 SHU. Cubanelle is a classic sweet Italian frying pepper. Long, tapered, thin-walled fruits are typically 4 to 6 inches, picked pale yellow-green for the crispest bite, then allowed to ripen to orange-red for deeper sweetness. Plants are dependable producers and usually start harvesting in about 65 to 75 days from transplant. Keep them in full sun with even moisture and add a stake when branches get heavy. Quick-blister them in olive oil, roast and peel for silky strips, or stuff and bake; they are a go-to for sofrito, sandwiches, pizzas, and any dish that wants pepper flavor without the burn.
