When plants are 6–8” tall, the top 3” of stem and leaves are edible. High in protein, potassium, phosphorus, vitamin A, and calcium. Invasive but edible weed in many agricultural crops. Native Americans used to gather the seeds to grind into flour. Also known as Wild Spinach, white Goosefoot, and Fat Hen.
